In this project, firstly chitin were extracted from shrimp wastes and then chitosan as a widely used material in different industries was made and used for glucosamine production. The purity of the product were determined by elemental analysis and FT-IR. The crystallinity index of the synthesized chitin were analyzed by X-ray diffraction and its morphology were characterized by scanning electron microscopy (SEM). In this investigation, time, temperature, the atmosphere of the extraction reaction and the degree of deacetilation were iected. C-NMR and H-NMR were used to determine the structure of glucosamine. The modified condition of the reaction on were 110 °C, 90 min, tree degree of deacetilation and under N 2 atmosphere.
