Researchers are interested on better isolation of foaming agent (saponin) in soy and similar plants. Saponin has applications in the food, pharmaceutical and cosmetic industries. In this research, the main objective was to investigate the possibility of using colloidal gas aphrons (CGA), as a green method, in purification and recovery of foaming agent in dry soybean press cake. Colloidal gas aphrons are microbubbles between 10 and 100 microns in size. Looking at their structure, a gas core is surrounded by a thin layer of surfactant and these bubbles are produced by the application of high shear stress to the surfactant solution. Moreover, optimizing extraction of the foaming agent available in soybean press cake was considered through studying three factors of temperature, pH, and time.
