Button mushroom ( Agaricus bisporus ) is the most commonly grown mushroom in the world as well as Iran.Mushroom are well known an excellnt source of protein, fiber, vitamins and minerale. In addition, they possess useful bioactive metabolites with a broad spectrum of pharmacological benefits such as antioxidant activity. Mushroom like any other plant organism has its own dietary needs. It’s food requirements will be provided through the compost. Source of N must exist to the extent required for suitable yield. Amino acids are source of N that have importat effect on plants. There for in this study, the effect of aplication some Amino acids such as, Aspargine, glycine and glutamin to the bedding compost on yield and quality of the mushroom were inrestigated. This study were done in Yekta Mushroom Company is located near Jarghoye region in 1396(2017). Exprement was conducted in a randomized complete block design with 8 treatments and 4 replications. Treatments included, Aspargine, Glycine and Glutamin in 2 concentration (150 , 300 mg.l -1 ), mix of three amino acids (150 mg.l -1 ) and control. For expriment necessary amount of Aspargine, Glycine and Glutamine for every 8 of blocks of compost(an experimental unit) was calculated and disored in a litter of distilled water and sprayed on the surface of the compost in 3 stages (after put soil on the surface, after first harvest and after second harvest). Harvesting was done at the 3 flash. Some morphological traits such as water percentage of the cap and stipe, diameter and length of the stipe, diameter of the cap, firmness and ash was musured. The result showed significant differens bettwen various treatments in length of the cap, firmness and water percentage of the cap, step and ash at 5% probability level. Aspargine at 150 mg.l -1 concentration improved increased the overall yield by 67/27% comprared to the control. Some physiological traits such as pH, organic acids, carbohydrate and protein was musured. So that used Aspargine with 150 mg.l -1 concentration improved increased the carbohydrate and protein respectively by 24.21 and 38.65% compared the control. Also Amino acids caused improved wet weight storage and l,value. Generally, recommended use Aspargine with 150 mg.l -1 concentration for improved yield and quality and post harvesting.
