There is a lot of wastage of pomegranate peel in pomegranate process factories. (30-60% depends of the variety). According to the recent studies, pomegranate peel contains high amount of food and medical grade anti-oxidant components. Three popular Iranian Pomegranate named Sweet Ardestan, Sour Ravar and Meikhosh Saveh were used in this study. In this research antioxidant of the wet and dried peels were extracted by either ordinary solvents such as ethyl acetate or CO 2 supercritical fluid protocol and after quantification, their phenolic profile was evaluated. The amount of protein, fat, fiber and ash of the samples along with their color were determined; the latter by a Hunterlab instrument. Least Significant Difference (LSD) tests in one-way completely randomized ANOVA in SAS 9.1 were used to analyze the data. In extraction with supercritical fluid, the effect of five variants of temperature, pressure, dynamic extraction time, static extraction time, co-solvent volume on extraction yield were examined in five different levels. Taguchi statistic method was used to optimize the conditions of extraction. Results indicated that significantly extraction yield from the peel of Meikhosh Saveh variety was more than Sweet Ardestan variety (P 0.05). Extraction yield from dried peel with ethanol solvent was also more than wet peel with ethyl acetate solvent (P 0.05). According to the results amount of fat, total ash and fiber of Ravar pomegranate (P 0.05) were more than Ardestan pomegranate peel; both were more than Meikhosh Saveh variety. whereas the amount of protein in Ardestan pomegranate peel was more than other varieties. High performance Liquid Chromatography (HPLC) was employed to evaluate extracted compounds by supercritical fluid. The results showed that considerably estigmasterol, estriol and testosterone or estradiol phytoestrogens have been extracted. Investigate the effect of varieties used in extraction system with supercritical fluid on the yield of extracted extraction from peel proved that the pressure had the most effects on the dependant factors. Temperature and co-solvent volume factors were also more effective specially on extracting phytoestrogen. Besides of phytoestrogens, compounds such as tannic-acids and anthocyanines were also found in Soxhlet method. The distinction between quantity and the kind of anthocyanines which were found in pomegranate peel varieties explain the differences of their value in Colorimetry tests.
