Iran is one of the leading pomegranate producing countries in the world and has vast cultivar variation. Pomegranate is an important source of bioactive components and has been used in traditional medicine in many cultures. It has been proved recently that pomegranate juice and fermented pomegranate juice have high antioxidant activity. All of these activities may relate to different phenol components which are present in pomegranate extract including punicalagin isomers, derivatives of ellagic acid and anthocyanins (Delphinidin, Cyanidin 3-glucoside, Pelargonidin and 3,5 di-glucoside derivatives ). These components are famous for their free radical removing and oxidation inhibiting activities. Extract derived from pomegranate peel in different concentration showed antioxidant and anti-mutagenic characteristics and confirmed it’s use as preserver and neutraceutical in food industry. In comparison with peel, pulp and seed in 28 kinds of fruits, pomegranate peel showed higher antioxidant activity. Detection and recognition of genes of antioxidant biosynthesis pathway in pomegranate peel is considered in this study. Two methods have been performed to reach to this purpose. DDRT-PCR technique or Differential Display RT-PCR that is one of most efficient techniques in gene detecting. Designing primers for some of important genes of antioxidants biosynthesis pathway, considering biosynthesis pathway and gene sequences recognized in other plants. Production pathway of these products (antioxidants) have been studied in some plants, that estimation of results has been used as a general pattern for selecting kind of genes for investigation and comparison.
