Using of pharmaceutical plants and the obtained products, gave them an economical value. There is a big difference between chemical elements and efficacious materials in plants, mean while, they are influenced by different processes and enviromental conditions. In the past, food stufts and oil were added by common permissible syntheses antioxidants such as BHT, TBHQ and BHA, while in recent years, consuming such componds have been confinded. It is because they may cause cancer. Also oxidative processes lead to many dangerous diseases like cancer, diabet, atherosclerosis and aging. Therefore, improving nutritional schedules is an efficiant strategy in reducing of chronic illnesses. Pharmaceutical plants and vegetables have such properties. Because of having phenolic componds, they have plenty of antioxidants properties. So, it is essential to do some examinations in different situation in order to achive high quality products. For this purpose five kinds of mint: Ahvaz mint, Esfahan pepermint, Kermanshah pepermint, Lorestan mint and Tabas mint, also two kinds of poneh (mint) were selected and harvested in fall, summer and spring seasons. Measurments were done using factorial experiment based on completely randomized blocks design with three replications. Fresh and dry weight of shoot and the shoot percent dry mater and also the ratio of leaf weight to the shoot weigh, and also antioxidant activity were measured.Total phenolic compounds was extracted by Etanol %80 based on Folin-Ciocalteu assay. Then the antioxidant activity of extracts in different phenolic componds, were tasted in two models of DPPH and b Carotene. The mentioned factors was measured in three seasons. Results performed that: Tabas showed the most and Karaj poneh the least percent of wet and dry weight of shoots, Lorestan mint showed the most but Kermanshah pepermint showed the least percent of shoot dry matter. Esfahan pepermint showed the highest leaf weight to shoot dry weight, while Esfahan poneh showed the least. Kermanshah pepermint includes the most amount of phenolic componds but Karaj poneh contain the least. According to the antoxidants activity studies with 50, 100 ppm concentrations in two models, the highest antioxidant activity belongs to Ahvaz and the lowst belongs to Esfahan poneh. Compairing the seasons, autumn showed the most and summer the least fresh and dry weight of shoot and percent of dry matter. The summer has most while the autumn has the least leaf shoot ratio. The spring owns the greatest activity while the autumn has the least antioxidants activity and phenolic componds. Key Words: Antioxidants activity, Phenolic compound, Season, Mint, Vegetative growth.
