In recent years, several studies have been carried out on natural gums including plant gums. Tragacanth gum is an exudating gum which is allocated to Iran and is commonly used in food, medicine and cosmetics. In the present study, two types of tragacanth gum, namely grade 1 and grade 4, were purchased from markets of Shahreza, Iran. Then the sample were cleaned to remove surface impurities, they were completely crushed and sieved. After solving the crushed gums in water, a solution of 4% concentration was prepared. In order to remove impurities, the solution was filtered using cloth filter. These solutions were heated at 65, 75 and 85° C for one minute and then homogenized at 1000 bar using high pressure homogenizer. Next, they were kept in refrigerator for 24 hours and were dried using freezing drier. Finally, the produced samples were used along with raw gum grade 4 as the control for further analysis.viscosity of samples were measured with rotational viscometer at different rotational speed.By increase the heat treatment temperature and homogenizing the samples, viscosity were decreased. Moreover, with increasing the speed of rotation, viscosity decreased. in other words, tragacanth gum showed a pseudo-plastic behavior. Examining solubility and water absorption capacity of tragacanth gum indicated that the heating treatment had not a significant effect on water absorption capacity; but homogenization at 1000 bar pressure led to significant decrease in water absorption capacity of tragacanth gum. Heat treatment tempreture and homogenization affected solubility of the tragacanth gum in a way that solubility of tragacanth gum increased with increasing the Heat treatment tempreture and homogenization. Results revealed that homogenizing and Heat treatment tempreture increase parameter L* of the color of the tragacanth gum solution. Also, the variable of Heat treatment tempreture and homogenization had no significant effect on parameters a* and b* of the tragacanth gum samples. Ratio of soluble part to non-soluble part of the tragacanth gum was mainly a function of pressure and this ration slightly reduced with homogenization. The emulsion activity and emulsion stability of tragacanth gum was to a greater extent dependent on pressure and with simultaneous homogenization and higher heat treatment temperature, these two feature significantly decreased. In the prepared emulsions, average size of the particles increased and two factors of heating treatment and pressure on average size of emulsions were effective in a way that particle sizes increased with increasing the temperature of heating temperature and pressure.
